From an elevated fine-dining experience at The West Table to laid-back pints at The Brewery LBK and Southern comfort fare at Dirk’s, the West family has cultivated a trio of downtown staples that keep locals and visitors alike coming back for more.
Meet Cameron and Rachel West
Born and raised in Lubbock, Cameron West graduated from Texas Tech before heading to culinary school at the Culinary Institute of America at Greystone in Napa Valley, California. There, he trained at the prestigious French Culinary Institute, where he also worked as a teaching assistant in the wine program. From there, he sharpened his skills in high-profile kitchens from the Ritz-Carlton Orlando to the Ritz-Carlton Dallas.
In 2014, Cameron returned home to open The West Table, blending bold flavors with big-city technique—without ever losing sight of his West Texas roots.
Cameron’s dream? He wanted to challenge people's palates and bring the community together. And he didn't go at it alone.
He and his wife, Rachel, a fellow Red Raider with a sharp eye for business and a shared love for the hospitality industry, joined forces. While Cameron leads in the kitchen, Rachel ensures the guest experience and business operations run smoothly.
After the West Table, they opened The Brewery LBK, blending craft beer with a casual vibe. Then came Dirk’s, their Southern-style concept restaurant, named after Cameron's grandfather Dirk West, Lubbock's iconic cartoonist and mayor.
Award-Winning Impact
In 2025, Visit Lubbock recognized Cameron and Rachel with the Heart of Hospitality Award during National Travel and Tourism Week. The award celebrates individuals whose contributions to the local hospitality scene have enriched Lubbock’s growth and cultural vibrancy.
